πŸ“ Instructions

10 steps
1

Preheat your oven to 180Β°C (350Β°F). Line a baking sheet with parchment paper.

2

In a large mixing bowl, combine the flour and protein powder. Mix well to ensure the protein powder is evenly distributed.

3

Add the cold, cubed butter to the flour-protein mixture. Use your fingers or a pastry cutter to rub the butter into the flour until the mixture resembles coarse breadcrumbs.

4

Make a well in the center and add the cold water and egg yolk. Use a fork to mix until the dough starts to come together.

5

Turn the dough out onto a floured surface and gently knead it into a ball. Wrap the dough in plastic wrap and refrigerate for at least 20 minutes.

6

Roll the chilled dough out on a floured surface to about 3mm thick. Use a round cutter (about 8-10 cm in diameter) to cut out circles.

7

Place about a teaspoon of kaya in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, and press the edges to seal. Crimp with a fork for a decorative edge if desired.

8

Place the puffs on the lined baking sheet. Beat the egg white in a small bowl and brush it over the tops of each puff to give a glossy finish.

9

Bake in the preheated oven for 15-20 minutes, or until the puffs are golden brown and crisp.

10

Allow the puffs to cool slightly on a wire rack before serving.
