In a large mixing bowl, combine whole wheat flour and whey protein powder.
Heat the almond milk and 30 grams of unsalted butter together in a small saucepan until the butter has melted. Let the mixture cool to a lukewarm temperature.
Incorporate instant yeast, sugar, and salt into the flour mixture.
Whisk the egg and vanilla extract into the lukewarm milk-butter mixture, then combine wet with dry ingredients. Stir until a dough begins to form.
Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
Once risen, punch down the dough and roll it out into a large rectangle about 1/4 inch thick.
Spread the remaining 20 grams of melted butter over the dough.
Mix together the ground cinnamon and light brown sugar, and sprinkle the mixture evenly over the buttered dough.
Starting from one of the long sides, tightly roll the dough into a log. Slice the log into 12 even pieces and place them cut-side-up in a greased baking dish.
Cover and let the rolls rise for another 30 minutes.
Preheat your oven to 190°C (375°F).
Bake the rolls in the preheated oven for 20-25 minutes until they are golden brown.
Remove from the oven and allow to cool slightly before serving warm.
