Cook the brown rice according to package instructions, then spread it out on a baking sheet to cool and dry slightly.
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the chicken sausage links and cook for 6-8 minutes until browned and cooked through. Remove from the skillet and slice into rounds.
In the same skillet, add the remaining olive oil and the sesame oil.
Add minced garlic and grated ginger, stir for about 1 minute until fragrant.
Add the diced carrot and cook for 3 minutes until it starts to soften.
Push the carrot to one side of the skillet and crack the eggs into the empty space. Scramble them until mostly cooked through, then mix them with the carrot.
Add the frozen peas to the skillet and cook for another 2 minutes.
Add the cooked brown rice, sliced chicken sausage, and soy sauce to the skillet. Stir everything together and cook for 3-4 minutes until heated through.
Season with black pepper and adjust soy sauce to taste.
Finish by stirring in the chopped green onions. Serve hot.
