Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
Melt the butter and brush a sheet of phyllo pastry with it. Layer another sheet on top and brush with more butter. Repeat with all 8 sheets.
Place the layered sheets on the prepared baking tray and bake for approximately 10-15 minutes until golden and crispy. Once baked, let them cool completely.
Soak the gelatin sheets in cold water for about 5 minutes to soften.
In a medium saucepan, combine whey protein powder, cornstarch, and milk. Whisk until smooth and no lumps remain.

Pour the custard into a shallow dish and cover the surface directly with plastic wrap to prevent a skin from forming. Allow it to cool to room temperature, then refrigerate until set, about 1-2 hours.
Once the custard is set, cut the phyllo pastry into rectangles. Place half of the rectangles on a serving tray, top with a generous layer of custard, and then cover with the remaining pastry rectangles.
Chill in the refrigerator for at least 30 minutes to allow the slices to firm up. Serve cold and enjoy your high protein custard slice!
