Preheat your oven to 180°C (350°F). Line a 9x9 inch baking tray with baking paper.
Peel and grate the beetroots. Set aside.
In a food processor, add the drained chickpeas and blend until smooth.
Add the grated beetroots, protein powder, almond flour, rolled oats, maple syrup, melted coconut oil, vanilla extract, baking powder, cinnamon, and a pinch of salt to the processed chickpeas. Blend until you obtain a smooth and uniform mixture.
Transfer the mixture to the prepared baking tray and spread it evenly with a spatula.
Bake in the preheated oven for about 25-30 minutes or until the edges start to pull away from the sides of the tray and a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool in the tray for 10 minutes, then lift the slice using the baking paper and allow it to cool completely on a wire rack.
Once cool, cut into 12 even slices and serve. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
