Easy to prepare in just 45 minutes, these baked potato skins are an ideal choice for game day, family dinners, or anytime youβre craving something deliciously indulgent yet mindful.
Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or lightly coat it with olive oil spray.
Wash and scrub the potatoes well. Puncture each potato a few times with a fork to allow steam to escape during cooking.
Microwave the potatoes on high for 6-7 minutes, or until slightly softened. Allow them to cool for 5 minutes.
Cut each potato in half lengthwise. Using a spoon, carefully scoop out most of the flesh from each potato half, leaving about 1/4 inch of potato attached to the skin.
Lightly spray the potato skins (inside and outside) with olive oil spray. Sprinkle with salt and black pepper. Place them cut-side down on the prepared baking sheet.
Bake the potato skins in the oven for 10 minutes until crispy. Flip them over and bake for another 5 minutes.
While the potatoes bake, cook the turkey bacon in a skillet over medium heat until crispy. Chop the cooked bacon into small pieces.
Remove the potato skins from the oven. Sprinkle the insides with shredded cheddar cheese and chopped turkey bacon.
Return to the oven and bake for an additional 3-5 minutes, or until the cheese is melted and bubbly.
Remove the potato skins from the oven and let them cool slightly. Garnish with a dollop of light sour cream and sprinkle with chopped chives if desired.
Serve immediately and enjoy your super skinny potato skins!
