Peel the potatoes and cut them into small 1/2-inch cubes. Rinse them in cold water to remove excess starch, then pat dry with a clean towel.

Heat 1 tablespoon of olive oil and the butter in a large, oven-safe skillet over medium heat. Once hot, add the diced potatoes in an even layer. Sprinkle with salt and pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy. Remove from skillet and set aside.

Using a spoon, create 4 small wells in the mixture and crack one egg into each well. Reduce the heat to low and cover the skillet with a lid. Cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny (or to your desired doneness).

Sprinkle the shredded cheddar cheese evenly over the skillet. Cover again for 1-2 minutes until the cheese is melted.
