Preheat your oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
Thaw the whole-grain puff pastry sheets according to the package instructions. Once thawed, roll them out on a lightly floured surface.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sautΓ© for 30 seconds, or until fragrant.
Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted. Remove from heat and let it cool slightly.
In a mixing bowl, combine the wilted spinach, reduced-fat feta cheese, ground black pepper, and fresh dill (if using). Mix until well combined.
Cut the puff pastry sheets into 8 equal squares or rectangles.
