Cut the chicken breasts into bite-sized pieces and set aside.
Peel and thinly slice the ginger and garlic. Trim the lemongrass and smash the stalks with the back of a knife. Finely chop the onion and the de-seeded red chili.
In a blender or food processor, combine the ginger, garlic, turmeric powder, lemongrass, onion, and chili. Blend into a smooth paste, adding a little water if necessary.
Heat the canola oil in a large pan over medium heat. Add the paste and fry for about 5 minutes, stirring continuously, until fragrant.
Add the chicken pieces to the pan and cook for another 5 minutes, stirring frequently, until the chicken begins to brown.
Pour in the low-fat coconut milk and water, then add the kaffir lime leaves. Stir well to combine.
Bring the mixture to a gentle simmer, reduce the heat to low, and cook for 15-20 minutes, or until the chicken is cooked through and tender.
Season the dish with salt and pepper, adjusting to taste.
A few minutes before serving, add the baby spinach to the pan and stir until just wilted.
Serve the Heart-Healthy Ayam Masak Lemak hot, ideally with brown rice or a side of your choice.
