Peel and cut the sweet potatoes into thin fries. Toss them in a bowl with 1 tablespoon of olive oil, salt, black pepper, and paprika.
Spread the sweet potato fries on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
