Preheat the oven to 375°F (190°C).
Cut chicken breasts into bite-sized pieces. Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add chicken and sauté until browned and cooked through, about 7-10 minutes. Remove from pan and set aside.
In the same skillet, add another tablespoon of olive oil. Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes or until vegetables are tender.
