Preheat your oven to 180°C (350°F).
Cut the whole-grain baguette lengthwise to open it up, but do not cut all the way through. Place it on a baking sheet.
Spread the Dijon mustard evenly on the inside of both halves of the baguette.
Slice the low-fat Swiss cheese and layer it evenly on one half of the baguette.
Add the lean low-sodium ham slices on top of the cheese layer.
Place the open baguette in the preheated oven directly on the baking sheet and let it bake for 5 minutes or until the cheese is slightly melted.
While the baguette is in the oven, slice the tomato and avocado into thin slices.
Once the cheese melts, remove the baguette from the oven. Lay the fresh spinach leaves, tomato, and avocado slices on top of the ham layer.
Drizzle a teaspoon of olive oil over the veggies and season with fresh ground black pepper.
Close the baguette by bringing the two halves together gently.
Cut the baguette into four equal pieces and serve immediately.
