Perfect for plant-based and Mediterranean-style diets, this recipe celebrates the art of simple, wholesome cooking.
Fill a large pot with 1 quart of water and bring it to a boil.
Trim the artichokes by cutting off the top third and removing any small leaves near the base. Trim the stems to about 1 inch, and use scissors to snip off the pointed tips from the remaining leaves.
Rinse artichokes under cold water to remove any dirt or bugs nestled between the leaves.
Add a pinch of salt to the boiling water and place the artichokes into the pot. Cover and simmer for about 15 minutes until the artichokes are just tender.
While the artichokes are cooking, juice the lemon and mince the garlic cloves. In a small bowl, mix the lemon juice, olive oil, minced garlic, and chopped fresh parsley together. Season with salt and pepper to taste.
Once tender, remove the artichokes from the pot and allow them to cool slightly. Cut each artichoke in half lengthwise and use a spoon to scoop out the fuzzy choke from the center of each half.
Preheat a grill to medium heat.
Brush the lemon-garlic mixture generously over the cut sides of each artichoke half.
Place the artichokes on the grill, cut side down, and grill for 5-7 minutes until the artichokes are charred and warmed through.
Remove from the grill and drizzle with any remaining marinade.
Serve warm, garnished with additional parsley if desired.
