Preheat the oven to 375Β°F (190Β°C).
On a lightly floured surface, roll out the whole wheat puff pastry sheets to smooth them and cut them into 6 equal squares.
In a large pan, heat the olive oil over medium heat. Add the spinach leaves and sautΓ© until wilted, about 2 minutes.
Remove the pan from the heat and stir in chopped cherry tomatoes, garlic powder, black pepper, and salt.
In a small bowl, beat 2 eggs with skim milk until well combined. Set aside.
Line a baking sheet with parchment paper and place the pastry squares on the sheet, spacing them apart.
Place a portion of the spinach and tomato mixture in the center of each pastry square, then crumble low-fat feta cheese on top.
Fold the corners of each pastry square towards the center, leaving some filling exposed, and gently press the edges to seal.
Brush the beaten egg mixture over the tops and edges of the pastries to help them turn golden during baking.
Bake in the preheated oven for 25 to 30 minutes or until the pastries are golden brown and puffed.
In the last few minutes of baking, prepare the remaining 1 egg as a poached or soft-boiled egg.
Once the pastries are finished baking, top each with slices of the soft-boiled or poached egg and garnish with fresh basil leaves.
Serve warm and enjoy this tasty, heart-healthy treat!
