Preheat the oven to 350°F (175°C).
Finely chop the onion and mince the garlic cloves.
In a medium skillet, heat the olive oil over medium heat. Add the onions and garlic, sautéing until they are translucent, about 5 minutes. Remove from heat and let cool slightly.
In a large mixing bowl, combine the ground turkey, oats, egg whites, sauteed onions and garlic, half of the canned tomatoes (drained), chopped parsley, black pepper, Worcestershire sauce, and Dijon mustard.
