Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
Add the fresh spinach to the skillet, cooking until wilted. Remove from heat and let it cool slightly.
