Preheat the oven to 350°F (175°C).
Slice the whole grain rolls in half and place them on a baking sheet.
Bake the rolls in the preheated oven for about 5 minutes until lightly toasted.
While the rolls are toasting, heat a non-stick skillet over medium heat and add 1/2 tablespoon of olive oil.
Add the turkey bacon slices to the skillet and cook for 2-3 minutes on each side until crispy. Remove and set aside on a paper towel.
In the same skillet, add the remaining 1/2 tablespoon of olive oil.
Crack the eggs into the skillet and cook sunny side up for about 3-4 minutes or until the whites are set and the yolks are still runny. Sprinkle with a pinch of salt and black pepper.
Slice the tomato and avocado thinly.
To assemble the rolls, place a layer of fresh spinach leaves on the bottom half of each roll.
Top the spinach with two slices of turkey bacon, followed by a sunny side up egg.
Add sliced tomato and avocado on top of the egg.
Drizzle a small amount of lemon juice over the avocado for added freshness.
Place the top half of the roll over the fillings and press gently.
Serve immediately and enjoy your heart-healthy bacon and egg roll!
