Dip half of each cookie sandwich into the melted chocolate and place them on a sheet of parchment paper. While the chocolate is still wet, sprinkle the dipped side with chopped almonds.
Allow the chocolate to set completely at room temperature or in the refrigerator before serving. Store the cookies in an airtight container for up to a week.
