📝 Instructions

10 steps
1

Rinse the sushi rice in cold water until the water runs clear. Drain well.

2

Combine the rice with 2 cups of water in a rice cooker or pot. If using a pot, bring to a boil, then reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

3

While the rice is cooking, prepare the vinegar mixture by heating the rice vinegar, sugar, and salt in a small saucepan over low heat until the sugar dissolves. Do not boil.

4

Transfer the cooked rice to a large bowl, gently folding in the vinegar mixture while fanning the rice to cool it. Let it cool to room temperature.

5

Slice the hamachi fillet into thin slices, approximately 3-4 mm thick, and about 2 inches long.

6

Wet your hands with water to prevent the rice from sticking. Take a small amount of sushi rice (about 20-25 grams) and form it into an oval shape about the size and shape of an adult thumb.

7

Dab a small amount of wasabi on top of the rice using your finger.

8

Place a slice of hamachi over the wasabi-topped rice, gently pressing down to mold them together.

9

Repeat with the remaining rice, wasabi, and hamachi slices.

10

Serve the hamachi nigiri with soy sauce on the side for dipping, if desired.
