Indulge in the rich and aromatic flavors of Gudpak, a traditional Indian sweet that combines wholesome ingredients and time-honored techniques for a dessert experience that's truly special. This recipe features the earthy essence of roasted whole wheat flour, the creamy decadence of ghee, and the natural sweetness of jaggery, all brought together with warm milk to create a soft and luscious treat. Enhanced with the crunch of mixed nuts—almonds, cashews, and pistachios—and the fragrant hint of cardamom, Gudpak is a celebration of texture and taste. Perfect for festive occasions or as a comforting homemade treat, this no-bake dessert is easy to prepare and ready to impress. Treat your family and guests to this nutritious, flavorful delight, set and shaped into beautiful pieces to serve as the crowning gem of your table.
Start by finely chopping the mixed nuts. Set aside for later use.
In a heavy-bottomed pan, heat the ghee over medium heat until it melts completely.
Add the whole wheat flour to the melted ghee. Stir continuously and roast the flour on low-medium heat for about 15-20 minutes until it turns golden brown and releases a pleasant nutty aroma. Be careful not to burn the flour.
In a separate saucepan, heat the milk but do not let it boil. Adjust the heat to low and keep it warm.
Add the jaggery to the roasted flour and ghee mixture. Stir continuously until the jaggery melts completely and is well combined with the flour.
Slowly pour the warm milk into the mixture, stirring continuously to avoid lumps.
Continue cooking the mixture on low heat until it starts to thicken and you see ghee starting to separate from the sides.
Add the cardamom powder and chopped mixed nuts to the thickened mixture. Mix well until everything is evenly distributed.
Grease a tray or a flat plate with a little ghee. Pour the cooked gudpak mixture into the tray and spread it evenly using a spatula.
Let it cool at room temperature for at least 30 minutes, or until it sets firmly.
Once set, cut the gudpak into desired shapes like squares or diamonds.
Serve and enjoy your homemade gudpak as a delightful dessert!
