Preheat a grill or grill pan over medium-high heat.
Trim the ends of the zucchini and slice them lengthwise into thin strips, about 1/8-inch thick. You should get about 12 strips.
Brush both sides of the zucchini slices with olive oil, then lightly season with a pinch of salt and black pepper.
Grill the zucchini slices for 1-2 minutes on each side until grill marks appear and the slices are slightly softened. Remove from the grill and let them cool slightly.
In a medium mixing bowl, combine the ricotta cheese, cream cheese, parmesan cheese, minced garlic, chopped basil, chopped parsley, lemon zest, salt, and black pepper. Mix until smooth and well-combined.
Take one grilled zucchini slice and spread about 1 tablespoon of the cheese mixture along one end of it.
Starting at the cheese-covered end, roll up the zucchini slice tightly and secure it with a toothpick.
Repeat with the remaining zucchini slices and cheese mixture.
Arrange the roll ups on a serving platter. Serve immediately, or chill in the refrigerator for up to 2 hours before serving.
