📝 Instructions

10 steps
1

Peel the green bananas and cut them into bite-sized cubes. Place the cubes in a bowl of water to prevent discoloration.

2

Heat the vegetable oil in a large pan or pot over medium heat. Add the mustard seeds and let them crackle for a few seconds.

3

Add the curry leaves, chopped onion, green chilies, minced garlic, and ginger to the pan. Sauté until the onions are soft and translucent.

4

Stir in the turmeric powder, ground coriander, and ground cumin. Cook for about 1 minute to toast the spices and release their aroma.

5

Drain the banana cubes and add them to the pan. Mix well to coat the bananas with the spices.

6

Pour in the water and salt. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pan and cook for 10-12 minutes or until the bananas are tender.

7

Add the coconut milk to the pan and stir gently. Simmer for another 5-7 minutes, allowing the flavors to meld together. Do not boil after adding coconut milk to avoid curdling.

8

Taste and adjust the seasoning with more salt if needed.

9

Turn off the heat and garnish the curry with fresh chopped cilantro, if desired.

10

Serve hot with steamed rice or flatbreads and enjoy your Green Banana Curry!
