In a large pot, bring the chicken broth to a boil over medium-high heat.
Add the rice or orzo to the simmering broth and reduce the heat to medium. Cook until tender, about 15 minutes.
While the rice or orzo cooks, crack the eggs into a medium-sized mixing bowl and whisk them until light and frothy.
Gradually whisk the lemon juice into the eggs. Set aside.
Once the rice/orzo is fully cooked, remove the pot from the heat.
