Serve this hearty, gluten-free dish over rice, couscous, or with warm crusty bread to soak up every last drop!
Heat olive oil in a skillet over medium heat.
Sear the chicken thighs (or beef chuck roast) for 2-3 minutes on each side until browned. Transfer to the crock pot.
In the same skillet, sauté the onion and garlic until softened, approximately 3-4 minutes.
Add the canned diced tomatoes, chicken (or beef) broth, red wine, dried oregano, ground cinnamon, bay leaves, salt, and black pepper to the skillet. Stir to combine and bring the mixture to a simmer.
Pour the tomato mixture over the meat in the crock pot.
If using kalamata olives, add them to the crock pot.
Cover and cook on low for 6-8 hours, or until the meat is tender and easily shredded.
Once cooking is complete, remove the bay leaves and discard.
In a small bowl, mix cornstarch and water to create a slurry.
Turn the crock pot to high and slowly stir in the cornstarch slurry. Cook for an additional 10-15 minutes until the gravy thickens.
Serve the Greek gravy over rice, couscous, or with crusty bread. Enjoy!
