πŸ“ Instructions

9 steps
1

In a large mixing bowl, combine the gluten free all-purpose flour, tapioca starch, xanthan gum, and salt. Whisk to blend evenly.

2

In a small bowl, mix the warm milk, warm water, and sugar. Sprinkle the dried active yeast over the top and let it sit for 5-10 minutes until foamy.

3

Make a well in the dry ingredients and pour in the yeast mixture. Stir the ingredients together until a thick, smooth batter forms. Cover the bowl with a clean kitchen towel and let it rise in a warm place for 30 minutes.

4

After 30 minutes, the batter should be bubbly and slightly risen. Stir it gently to knock out some of the excess air.

5

Heat a non-stick skillet or griddle over medium-low heat. Lightly grease the skillet with butter or oil. Place 3-4 crumpet rings (approximately 3 inches in diameter) onto the skillet. Grease the inside of the rings as well to prevent sticking.

6

Spoon 2-3 tablespoons of batter into each ring, smoothing the top slightly. The batter should be about 1 cm deep in each ring.

7

Cook the crumpets for 5-7 minutes on one side, until bubbles form on the surface and the tops are slightly dry. Carefully remove the rings and flip the crumpets, cooking for another 2-3 minutes until golden on the second side.

8

Repeat with the remaining batter, greasing the rings and skillet between batches as needed.

9

Serve warm, topped with butter, jam, or your favorite spread. These crumpets can also be toasted once cooled.
