Preheat your oven to 220Β°C (200Β°C fan) or 425Β°F. Place a 12-hole muffin tin in the oven to heat up.
In a mixing bowl, whisk together the gluten-free plain flour and salt to ensure there are no lumps.
In a separate bowl or jug, whisk the eggs and milk together until fully combined and frothy.
Slowly pour the wet mixture into the bowl with the flour, whisking continuously until you have a smooth batter. Set the batter aside to rest for 10-15 minutes.
