Indulge in the authentic flavors of Bihar with this Gluten-Free Traditional Litti recipe—a wholesome twist on a beloved Indian delicacy! Made with gluten-free all-purpose flour and psyllium husk powder, these littis offer the perfect flaky texture while catering to dietary needs. The filling features a vibrant mix of sattu (roasted gram flour), zesty pickle masala, mustard oil, and aromatic spices like carom seeds and fresh ginger, delivering a delightful burst of flavor in every bite. Baked to golden perfection and optionally brushed with ghee for extra richness, these littis pair perfectly with chokha, a mashed vegetable side, for a classic and satisfying meal. Ready in just over an hour, this recipe is ideal for family dinners or festive occasions, bringing a taste of old-world Indian tradition to modern gluten-free kitchens.
In a bowl, mix the gluten-free all-purpose flour, psyllium husk powder, and salt. Add ghee and rub it into the flour until the mixture resembles breadcrumbs.
Gradually add warm water and knead the dough until it is smooth and pliable. Cover and let it rest for 20 minutes.
For the stuffing, mix sattu, pickle masala, mustard oil, carom seeds, grated ginger, green chilies, coriander leaves, and lemon juice in a bowl. Adjust salt to taste and set aside.
Divide the rested dough into 6 equal portions. Roll each portion into a ball and flatten it slightly.
Take one dough ball and flatten it further to make a small disc. Place 2 tablespoons of the prepared stuffing in the center.
Carefully bring the edges of the dough together to seal the stuffing inside. Shape it into a smooth ball. Repeat for the remaining dough portions.
Preheat your oven to 375°F (190°C). Arrange the littis on a parchment-lined baking tray.
Bake the littis for 30-35 minutes, flipping them halfway through, until they are golden and cooked through.
Optional: Brush the baked littis with ghee for added flavor and shine.
Serve hot with chokha (mashed eggplant or potato side dish) and add extra ghee on the side for dipping if desired.
