Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the gluten-free all-purpose flour, xanthan gum, baking powder, and salt.
Cut the cold unsalted butter into small cubes and add it to the flour mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.
In a separate small bowl, whisk together the Greek yogurt, egg, and water until smooth.
Add the wet ingredients to the dry ingredients, stirring until a soft dough forms. If the dough is too sticky, add a little more flour, a tablespoon at a time, until it's manageable.
Lightly flour a clean work surface and turn the dough onto it. Roll it out to about 1/4 inch thickness.
Using a pizza cutter or sharp knife, cut the dough into strips that are approximately 1-inch wide and 3-inches long.
Take one mini cocktail sausage and place it at one end of a dough strip. Roll the dough around the sausage, pressing gently to seal.
Place the wrapped sausages seam side down on the prepared baking sheet.
Once all sausages are wrapped, brush the tops of each with melted butter and sprinkle with poppy seeds, if using.
Bake in the preheated oven for 18-20 minutes or until the dough is golden brown.
Remove from the oven and let cool slightly before serving. Enjoy warm!
