Dice the paneer into small cubes, about 1 cm each.
Slice the red and green bell peppers into thin strips. Also, slice the onion and tomato into thin strips.
In a mixing bowl, combine Greek yogurt, lemon juice, salt, cumin powder, red chili powder, and turmeric powder to make the marinade.
Add the paneer cubes to the marinade and mix well to coat all the pieces evenly. Allow it to marinate for about 10 minutes.
Heat olive oil in a non-stick pan over medium heat. Add the marinated paneer and cook for about 5-7 minutes, stirring occasionally, until the paneer is golden and cooked through. Remove from the pan and set aside.
In the same pan, add the sliced onions, red bell peppers, and green bell peppers. Sauté for about 3-4 minutes until they are slightly tender but still have a crunch.
Warm the gluten-free wraps according to package instructions.
To assemble the wrap, place a wrap on a flat surface, layer a portion of the sautéed vegetables, followed by a portion of cooked paneer.
Top it with fresh tomato slices and sprinkle with fresh coriander leaves.
Fold the wrap sides over the filling and roll it tightly into a wrap.
Serve immediately to enjoy your Gluten-Free Paneer Wrap warm.
