Preheat the oven to 375°F (190°C).
Roll out the gluten-free pie crusts to slightly thin them out and cut them into circles using a round cookie cutter or a glass that fits into a muffin tin.
Gently press the circles into a greased mini muffin tin to form the quiche crusts.
In a skillet over medium heat, warm olive oil and add the diced onions. Sauté for 3-4 minutes until translucent.
Add the chopped mushrooms and spinach to the skillet and cook for another 3 minutes until the spinach is wilted. Remove from heat.
In a medium-sized bowl, whisk together eggs, milk, salt, and black pepper.
Stir the sautéed vegetables and shredded cheddar cheese into the egg mixture.
Pour the filling into the prepared crusts, filling each about three-quarters full.
Bake in the preheated oven for 20-25 minutes, or until the egg mixture is set and the tops are lightly browned.
Allow the mini quiches to cool slightly in the muffin tin before removing them.
Serve warm or at room temperature.
