In a large bowl, combine the gluten-free flour, xanthan gum, instant yeast, sugar, and salt. Mix well.
Add the warm water and olive oil to the dry ingredients. Stir until the mixture becomes a sticky dough.
Cover the bowl with a clean towel and let the dough rise in a warm place for about 1 hour, or until it doubles in size.
While the dough is rising, prepare the chicken filling. Cut the chicken breast into small cubes, about a quarter inch in size.
