Rinse the chicken livers thoroughly under cold water. Pat them dry with paper towels and cut them into bite-sized pieces.
Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the liver pieces and sear them until browned on all sides, about 5-7 minutes. Transfer the liver to a plate and set aside.
Dice the large onion, slice the carrots and celery stalks, and mince the garlic cloves.
Add the remaining tablespoon of olive oil to the same pot and sauté the onion, carrots, and celery until the onion becomes translucent, about 5 minutes.
Cube the potatoes into bite-sized pieces and add them to the pot along with the minced garlic. Stir everything together and cook for another 2 minutes.
Pour in the gluten-free beef broth and add back the browned liver pieces to the pot.
Add the bay leaves, dried thyme, salt, and black pepper. Stir well to combine all ingredients.
Bring the stew to a simmer, then reduce the heat to low. Cover the pot and let it cook for 35-40 minutes or until the vegetables are tender.
Stir in the frozen peas and cook for an additional 5 minutes. Adjust seasoning with more salt and pepper, if needed.
Remove the bay leaves before serving. Ladle the gluten-free liver stew into bowls and enjoy its hearty flavors.
