In a large mixing bowl, combine gluten-free flour, xanthan gum, instant yeast, granulated sugar, and salt.
In a small saucepan, heat 250ml milk and 60g butter over low heat until butter is melted. Let it cool until lukewarm.
Add milk mixture, vanilla extract, and 2 beaten eggs to the dry ingredients, mixing with a spatula until a dough forms.
Cover the bowl with a clean cloth and let the dough rise in a warm place for about 1 hour or until doubled in size.
While dough is rising, prepare the custard. In a medium bowl, whisk together 4 egg yolks, 30g cornstarch, and 100g sugar until smooth.
Heat 500ml milk and 1 teaspoon vanilla bean paste in a saucepan over medium heat until just about to boil.
Gradually whisk hot milk into the egg yolk mixture. Return the mixture to the saucepan and cook over medium heat, whisking constantly until it thickens and boils. Boil for 1 minute, then remove from heat.
Strain the custard through a fine mesh sieve into a bowl, cover with plastic wrap (press it directly onto custard surface), and let it cool in the refrigerator.
