Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat.
Place one gluten-free corn tortilla in the pan.
Sprinkle 1/4 cup of shredded cheese evenly over the tortilla.
Optionally, add a few slices of cooked chicken breast and some sliced jalapeños over the cheese.
Season with a pinch of salt and black pepper.
Top with another gluten-free corn tortilla.
Press down gently with a spatula to help seal the tortillas together.
Cook for 3-4 minutes, or until the bottom tortilla is golden brown and crispy.
Carefully flip the quesadilla using the spatula.
Cook the other side for another 3-4 minutes, or until it is also golden brown and the cheese inside is melted.
Remove from the pan and repeat the process with the remaining tortillas, adding more olive oil to the pan as needed.
Once both quesadillas are cooked, cut them into wedges using a sharp knife or pizza cutter.
Garnish with fresh cilantro and serve warm.
