Wash and prepare all vegetables. Cut broccoli into bite-sized florets. Thinly slice bell peppers and carrots. Trim ends of sugar snap peas. Slice baby corn diagonally. Chop green onions into 1-inch pieces. Mince garlic cloves. Grate the ginger.
In a small bowl, mix together tamari, sesame oil, and cornstarch with water to form a smooth sauce.
Heat olive oil in a large wok or frying pan over medium-high heat.
