Rinse the sushi rice under cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil over medium heat.
Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for 15 minutes. Remove it from the heat and let it sit with the lid on for another 10 minutes.
Meanwhile, in a small bowl, mix the rice vinegar, sugar, and salt until the sugar dissolves.
Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
While the rice is cooling, peel and cut the cucumber and carrot into thin matchstick-sized pieces.

Repeat the process for the remaining rolls.
