In a large bowl, mix together the gluten-free flour, xanthan gum, and salt.
Add the cold unsalted butter, cut into small cubes, into the flour mixture. Using a pastry cutter or your fingers, rub the butter into the flour until the mixture resembles coarse breadcrumbs.
Gradually add the ice water, stirring until the dough begins to come together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
