Transform your breakfast routine with this stunning German Baked Apple Pancake, a show-stopping dish that’s as easy to make as it is impressive. Made with thinly caramelized apple slices, a hint of warm cinnamon, and a light, airy batter, this recipe combines the crisp sweetness of baked apples with the richness of a traditional Dutch baby pancake. Perfect for weekend brunch or as a cozy dessert, this skillet-made delight puffs beautifully in the oven and is finished with a dusting of powdered sugar for a touch of elegance. With just 15 minutes of prep time, it’s a deliciously simple way to bring a taste of Germany to your table.
Preheat your oven to 425°F (220°C).
Peel, core, and slice the apples into thin wedges.
In a 10-inch ovenproof skillet (cast iron is ideal), melt the butter over medium heat. Reserve 1 tablespoon of melted butter for later use.
Add the apple slices to the skillet and sprinkle with granulated sugar and cinnamon. Cook the apples for 4-5 minutes, stirring occasionally, until they are softened and lightly caramelized.
In a medium mixing bowl, whisk together the flour, milk, vanilla extract, eggs, reserved melted butter, and kosher salt until the batter is smooth and lump-free.
Pour the batter evenly over the caramelized apples in the skillet. Do not stir.
Transfer the skillet to the preheated oven and bake for 18-22 minutes, or until the pancake puffs up and the edges are golden brown.
Remove the skillet from the oven and let the pancake cool slightly. The pancake will deflate slightly as it cools.
Dust the pancake with powdered sugar, if desired, and slice into wedges. Serve warm and enjoy!
