📝 Instructions

9 steps
1

Remove the steak from the refrigerator and let it come to room temperature for about 20 minutes before cooking.

2

Thinly slice the onions and set them aside. Mince 2 cloves of garlic and leave the remaining garlic cloves whole.

3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for 10-12 minutes, or until they are caramelized and golden brown. Remove the onions from the skillet and set them aside.

4

Pat the steak dry with paper towels and season both sides with salt and pepper.

5

In the same skillet, increase the heat to medium-high and add 1 tablespoon of olive oil. When the oil is hot, carefully add the steak. Cook for 3-5 minutes on each side for medium-rare, or adjust the time according to your preferred doneness.

6

Reduce the heat to medium. Add the butter, minced garlic, whole garlic cloves, and thyme to the skillet. Once the butter melts, spoon it over the steak continuously while it finishes cooking, about 2-3 minutes.

7

Remove the steak from the skillet and let it rest on a cutting board for 5-7 minutes to retain its juices.

8

While the steak is resting, return the caramelized onions to the skillet. Add a teaspoon of soy sauce for an extra umami kick (optional). Stir and heat for 1-2 minutes.

9

Slice the steak against the grain and serve topped with the caramelized onions and garlic from the skillet.
