📝 Instructions

9 steps
1

Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

2

While the pasta cooks, heat a large skillet over medium heat. Add the Italian sausage, breaking it up into crumbles with a spatula, and cook until browned and fully cooked through, about 7-8 minutes. Remove the sausage from the skillet and set aside.

3

In the same skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.

4

Add the cherry tomatoes, zucchini, and red bell pepper to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.

5

Stir in the fresh spinach leaves and cook for 2-3 minutes, or until wilted.

6

Add the cooked sausage back into the skillet, along with the crushed red pepper flakes (if using), salt, and black pepper. Toss everything together to combine.

7

Add the cooked pasta to the skillet. Stir well to coat the pasta in the vegetable and sausage mixture. If the dish seems dry, gradually add the reserved pasta water, a tablespoon at a time, until the desired consistency is reached.

8

Remove the skillet from heat and stir in the freshly grated Parmesan cheese and chopped basil.

9

Taste and adjust seasoning if needed. Serve hot, garnished with additional Parmesan and basil if desired.
