📝 Instructions

12 steps
1

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

2

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

3

Gradually add the ice water, one tablespoon at a time, mixing just until the dough comes together. Be careful not to overwork the dough.

4

Divide the dough into two disks, wrap each in plastic wrap, and refrigerate for at least 30 minutes.

5

While the dough chills, prepare the fruit filling by heating your chosen fruit in a saucepan over medium heat. In a small bowl, whisk together the cornstarch and 2 tablespoons of water until smooth.

6

Stir the cornstarch mixture into the simmering fruit and cook for 2-3 minutes, or until the mixture thickens. Remove from heat and let the filling cool slightly.

7

On a lightly floured surface, roll out one of the chilled dough disks to about 1/8-inch thickness. Using a round cutter (about 4-5 inches in diameter), cut out circles of dough.

8

Place a small spoonful of fruit filling in the center of each dough circle, being careful not to overfill. Fold the dough over to form a half-moon shape and press the edges together. Seal the edges by crimping with a fork.

9

Heat the vegetable oil in a deep skillet or heavy-bottomed pot to 350°F (175°C).

10

Carefully fry the pies in batches, 2-3 at a time, for 2-3 minutes per side, or until golden brown. Use a slotted spoon to transfer the fried pies to a paper towel-lined plate to drain.

11

If desired, dust the fried pies with powdered sugar while they are still warm.

12

Serve immediately and enjoy your homemade fried fruit pies!
