1. Start with making the custard: In a medium saucepan, heat the milk over medium heat until it begins to steam but does not boil.

2. In a separate bowl, whisk together egg yolks, granulated sugar, and cornstarch until smooth and pale in color.

3. Gradually whisk a ladle of the hot milk into the egg yolk mixture to temper the eggs, then slowly pour the egg mixture back into the saucepan of milk, whisking constantly.
