πŸ“ Instructions

11 steps
1

Preheat your oven to 180Β°C (350Β°F) and line a 20x30 cm (8x12 inch) rectangular baking tin with parchment paper.

2

In a medium saucepan, melt the butter over low heat. Once melted, add the brown sugar and honey. Stir gently until the sugar dissolves completely.

3

Slowly stir in the heavy cream, then increase the heat slightly. Allow the mixture to gently simmer for 2-3 minutes until slightly thickened.

4

Remove the saucepan from the heat and stir in the almonds, pistachios, dried cranberries, dried apricots, and all-purpose flour until the ingredients are evenly coated.

5

Pour the mixture into the prepared baking tin and spread it out evenly using a spatula. Press it down lightly to ensure it’s compact.

6

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. Be careful not to overbake, as the caramel may burn.

7

Remove the tin from the oven and allow the slice to cool completely in the tin. It will harden as it cools.

8

Once cooled, carefully lift the Florentine slab out of the tin using the parchment paper. Using a serrated knife, cut it into 12 rectangular slices or smaller pieces if preferred.

9

Melt the dark chocolate in a heatproof bowl set over a pan of simmering water, ensuring the bottom of the bowl doesn’t touch the water. Alternatively, microwave in short bursts, stirring in between, until smooth and glossy.

10

Dip the bottom of each Florentine slice into the melted chocolate or spread a generous layer of chocolate on the bottom using a knife or spatula. Place the slices chocolate-side-up on a wire rack to set.

11

Allow the chocolate to harden completely before serving. Store in an airtight container for up to 1 week.
