πŸ“ Instructions

12 steps
1

Grease and line a 20cm (8-inch) round cake tin with parchment paper.

2

In a large saucepan, combine the mixed dried fruits, butter, brown sugar, water, honey, cinnamon, nutmeg, and ginger. Bring to a boil over medium heat, stirring occasionally, then reduce the heat and simmer for 5 minutes. Remove from heat and allow the mixture to cool to room temperature.

3

Preheat your oven to 150Β°C (300Β°F).

4

In a mixing bowl, sift together the all-purpose flour and baking powder.

5

Add the cooled fruit mixture to the dry ingredients, folding gently to combine.

6

Beat the eggs in a small bowl and stir in the vanilla extract. Add this to the fruit and flour mixture and mix until evenly incorporated.

7

If using, fold in the chopped almonds for added texture.

8

Pour the batter into the prepared cake tin, smoothing the surface with the back of a spoon.

9

Bake in the preheated oven for 90 minutes, or until a skewer inserted into the center comes out clean.

10

Remove the cake from the oven and let it cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

11

If desired, brush the cake with brandy while warm or soak the cake by wrapping it in foil and storing it overnight to allow the flavors to develop beautifully.

12

Slice and serve as is, or with a dollop of cream or a cup of tea for a delightful treat!
