Preheat your oven to 120°C (250°F). Line a baking sheet with parchment paper.
In a clean, dry bowl, whisk the egg whites until they form stiff peaks. Gradually add caster sugar, one tablespoon at a time, beating well between each addition until the mixture is glossy and holds stiff peaks.
