📝 Instructions

14 steps
1

Thoroughly rinse the basmati rice in cold water until the water runs clear. Soak the rice for 30 minutes, then drain and set aside.

2

Heat the vegetable oil or ghee in a large pot over medium heat. Add the chopped onions and sauté until golden brown.

3

Add the minced garlic, grated ginger, and slit green chilies to the pot. Stir and cook for 1-2 minutes until fragrant.

4

Add the chopped tomatoes and tomato paste. Stir well and cook until the mixture becomes a thick paste.

5

Stir in the cinnamon stick, bay leaves, cardamom pods, cloves, cumin seeds, and the dried limes. Sauté for another minute to release their aromas.

6

Add the chicken pieces to the pot and cook until they are lightly browned on the outside.

7

Sprinkle in the ground turmeric, ground coriander, ground cumin, ground cardamom, ground black pepper, and salt. Mix well to coat the chicken with the spices.

8

Pour in the water or chicken stock and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 30 minutes until the chicken is cooked through.

9

Remove the chicken pieces from the pot and set them aside. Taste the broth and adjust the seasoning if necessary.

10

Add the drained basmati rice to the pot, ensuring it is evenly spread. Nestle the chicken pieces back into the pot on top of the rice.

11

Cover the pot tightly and cook on low heat for 20-25 minutes or until all the liquid is absorbed and the rice is tender.

12

Turn off the heat and let the pot rest, covered, for 10 minutes. This allows the flavors to meld together beautifully.

13

Fluff the rice gently with a fork, being careful not to break the rice grains. Transfer the Machboos to a serving platter.

14

Garnish with fresh coriander leaves and serve hot. Enjoy this aromatic Emirati Chicken and Rice Machboos with yogurt or salad on the side.
