Preheat the oven to 400°F (200°C).

Peel away any loose outer layers of the elephant garlic bulbs, keeping the individual cloves intact. Slice off the top of each bulb to expose the cloves slightly.

Drizzle the exposed garlic bulbs with olive oil and wrap them tightly in aluminum foil. Roast in the preheated oven for 35-40 minutes, until the cloves are soft and caramelized.
