  • 4 large Eggs
  • 1 large Onion
  • 2 pieces Green chili
  • 1 tablespoon Ginger-garlic paste
  • 1 teaspoon Curry powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Coriander powder
  • 0.25 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Fresh coriander leaves
  • 2 tablespoons Water

Preheat the oven to 400°F (200°C).

Boil the eggs in a pot of water for about 10 minutes until hard-boiled. Once done, peel the eggs and cut each into halves.

While the eggs are boiling, finely chop the onion and green chilies.

In a pan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent.

Add the green chilies and ginger-garlic paste to the onions and sauté for another 2 minutes.

Stir in the curry powder, red chili powder, coriander powder, turmeric powder, and salt. Add 2 tablespoons of water and cook the mixture for another 2 minutes, until the spices are well incorporated.

Remove the pan from heat and let the mixture cool slightly. Once cooled, stir in the fresh coriander leaves.

Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares.

Take each pastry square, place a piece of boiled egg in the center, and top it with a tablespoon of the spiced onion mixture.

Fold the pastry over the egg and onion mixture to form a triangle, rectangle, or envelope shape, sealing the edges by pressing them with a fork.

Place the prepared puffs on a baking sheet lined with parchment paper.

Brush the tops of the puffs with a little water or milk for a golden finish.

Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
