📝 Instructions

10 steps
1

Season both sides of the steaks with salt and ground black pepper.

2

Heat a large skillet over medium-high heat and add the olive oil and 2 tablespoons of butter. Once the butter is melted and foaming, place the steaks in the skillet.

3

Cook the steaks for 3-4 minutes on each side for medium-rare or adjust the time to your preferred doneness. Transfer the steaks to a plate and cover loosely with foil to rest.

4

Reduce the heat to medium and add the remaining 2 tablespoons of butter to the skillet. Stir in the minced shallots and garlic, cooking until fragrant, about 1 minute.

5

Add the sliced mushrooms to the skillet and cook until softened and browned, about 4-5 minutes.

6

Carefully pour in the cognac or brandy and ignite with a long lighter or match to flambé (if desired). Let the alcohol burn off completely, about 1 minute.

7

Stir in the beef stock, scraping up any browned bits from the bottom of the skillet. Let the mixture simmer and reduce by half, about 3-4 minutes.

8

Whisk in the Dijon mustard and heavy cream, and continue to simmer until the sauce thickens slightly, about 2-3 minutes.

9

Return the steaks, along with any accumulated juices, back to the skillet. Spoon the sauce over the steaks and let them warm through for 1 minute.

10

Garnish the dish with chopped fresh parsley and serve immediately, pairing with mashed potatoes, roasted vegetables, or a crisp salad.
