📝 Instructions

8 steps
1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of the pasta water and then drain the pasta.

2

While the pasta cooks, prepare the sauce mixture. In a medium bowl, whisk together the eggs, grated Parmesan cheese, and heavy cream until smooth. Set aside.

3

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and diced ham, and sauté for 2-3 minutes until the ham is lightly browned and fragrant.

4

Reduce the heat to low and add the cooked spaghetti to the skillet with the ham and garlic. Toss well to combine.

5

Remove the skillet from heat to avoid scrambling the eggs. Immediately pour the egg mixture over the pasta, stirring quickly to coat the spaghetti evenly. The residual heat will cook the eggs and create a creamy sauce.

6

If the sauce is too thick, gradually add the reserved pasta water a tablespoon at a time until the desired consistency is reached.

7

Season the carbonara with salt and freshly ground black pepper to taste. Garnish with chopped parsley if desired.

8

Serve immediately, topped with extra grated Parmesan cheese if preferred.
